Cookie Dough Pretzel Bites

Cookie dough pretzel bites offers that salty sweet combination that is irresistible. These perfectly portioned bites would make the idea snack for your next movie night. They take less than 15 minutes to make and are gluten free and vegan.

Ingredients

  • 150 grams Gluten free plain flour without xantham gum
  • 80 grams Dairy free butter i used Pure brand
  • 30 grams Coconut sugar
  • 30 grams Vegan chocolate
  • 60 grams Gluten free pretzels i used Schar brand

Instructions

  1. Optional place flour on a baking tray and heat in the oven at 180c for 5 minutes to kill any bacteria.

  2. In a large mixing bowl cream the butter and coconut sugar together.

  3. Add flour and mix together until a dough forms.

  4. Roughly chop chocolate and stir through the dough.

  5. Scoop the dough into 1 tsp balls

  6. Place one cookie dough ball inbetween 2 pretzels and press down lightly.

  7. Optional melt down some more chocolate and dunk half the side of the cookie dough pretzel bite into the melted chocolate then leave to set.
