No sugar gluten and dairy free pancakes. This usually makes 7 medium sized pancakes. That i split into two servings.

Ingredients

  • 135 grams gf plain flour
  • 125 ml rice milk or other non dairy milk
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Weigh out 135 grams of gf plain flour and add to a large mixing bowl.

  2. Weigh out 125 ml or 1/2 cup rice milk or other non dairy milk add to the flour in the mixing bowl.

  3. Add one large egg, vanilla extract and baking powder to the mixing bowl and stir all the ingredients together until you get a smooth mixture with no lumps. 

  4. Spray a non stick pan with coconut spray or other cooking spray. I use the frylight brand. Turn the heat on to low to medium.  I use a 1/4 cup as a measure for the mixture. Pour into the centre of the pan and leave to cook until you see bubbles rise on top of your pancake. this takes about 2 minutes or so. 

  5. Flip pancake over to cook the other side for anther two minutes or until golden brown.

  6. Once all pancakes are cooked you can serve them with fresh fruit and liquid sweeter of choice. Or use what ever toppings you have on hand. This usually makes about 7 medium sized pancakes.
