Ingredients
- 140 grams Gluten free plain flour
- 80 grams Dairy free butter
- 30 grams Coconut sugar
- 1/2 tsp Raspberry extract
- 30 grams White chocolate
- 1 tbsp Freeze dried raspberries
Instructions

Cream together butter and sugar in a large mixing bowl.

Mix in raspberry extract

Add in flour and mix till combined.

Roughly chop white chocolate and stir through the cookie dough

Mix in the freeze dried raspberries.

Scoop the cookie dough into balls. I used 1 tbsp measure to make 10 balls.

Store cookie dough in an airtight container in the fridge for 2-3 days or freeze for later use.
