Gluten free shortbread cookies with a layer of vegan caramel and dark chocolate on top. A delicious twist on the original Twix bar. The crunchy yet crumbly cookie base with gooey caramel and rich dark chocolate top. Makes a seriously addictive treat.  

The combination of caramel and chocolate are seriously delicious and additive. Making these vegan twix cookies are a must. 

I choose to make twix cookies as opposed to twix bars as everyone loves cookies right?

Of course you could make them into bars if you prefer. Simply roll the cookie dough into a rectangle then cut into bars.

Vegan caramel 

Am not going to lie the caramel part of this recipe was a pain to make. Now I have figured out how best to make it. Hopefully the tips i have learned can help you out and make it a bit easier for you to make.

Here’s a few tips I have learned. 

Use a large pot so the sugar is in one layer. As it helps the sugar melt more evenly.  

Don’t be tempted to stir it. 

Be patient and don’t rush it. 

Use a candy thermometer for best results.

If you can find a store-bought vegan caramel then I think it would be worth buying. As its easier and less hassle. I don’t have easy access to any hence why I made my own.  

In the end the caramel turned out great and taste exactly like I remember. It was totally worth the time and effort to make. 


Easy clean up 

Once you finish making the caramel fill the sauce pot up half way with water and bring to the boil. This will dissolve any remaining caramel and make it much easier to clean the pot.

Homemade or store bought chocolate

Making your own chocolate is a lot simpler and easier than you would think With three ingredients you can whip up a batch of homemade chocolate in no time. If you want to make this chocolate recipe separately you can double the recipe below and pour it into a silicone chocolate bar mould.

Alternatively you can of course buy a bar of dairy free/vegan chocolate for any major supermarket. Most chocolate that is 70% cacao or more tends to be dairy free. Be careful and also double check the ingredients.

Easy shortbread cookie 

Thankfully making this shortbread cookie was much easier than the caramel. Using only 5 ingredients these cookies turned out great. They have that typical crunchy yet crumbly texture that you know and love about shortbread. 


Using dairy free butter to make them vegan and gluten free flour to make the suitable for people with wheat or gluten intolerances.  

You can make the cookies and the caramel on two separate occasion. Then assemble the cookies at a later time. The caramel stores well in the fridge and the cookies kept fresh in an airtight container.

How to assemble

Take one cookie and spoon ½ a tablespoon of caramel on to one cookie and smooth out. Then spoon some melted dark chocolate over the caramel. Place the finished cookies onto a plate and in to the fridge until the chocolate has set.  

These cookies can get a little messy because of the caramel. Once the cookies have set in the fridge, they will be a lot easier to handle and less messy.

  • 200 grams White caster sugar
  • 70 ml Coconut cream
  • 70 grams Vegan butter

Shortbread Cookies

  • 125 grams GF plain flour
  • 65 grams Vegan butter
  • 25 grams Coconut sugar
  • 12 tsp Xanthan gum
  • 12 tsp Baking powder


  • 50 grams Cacao butter
  • 50 grams Cacao powder
  • 10 grams Liquid sweetener i used fruit syrup



  1. In a large sauce pot add the sugar and turn the heat to medium – high. Leave to melt don't stir the sugar. You can swirl the pot if need be.

  2. Once the sugar has melted and turned a golden brown add in the butter and leave to melt.

  3. Now stir together then add the coconut cream and continue to stir for 2-3 minutes.

  4. Pour the caramel into a heatproof dish. Leave to cool and set in the fridge for at least 2 hours.


  1. Melt the cacao butter in the microwave in 30 second burst until completely melted.

  2. Add the melted cacao butter, cacao powder and liquid sweetener into a small mixing bowl and stir until everything is well combined and you have smooth liquid. Either leave to set and then melt later when needed. Or use straight away.

Shortbread cookie

  1. Pre heat oven to 180c and lined a baking tray with greaseproof paper

  2. In a medium sized bowl combine the flour, baking powder, xantham gum and coconut sugar. Stir to combine

  3. Melt the vegan butter in the microwave for 45-60 seconds.

  4. Add melted butter to the dry ingredients and mix combine until a dough forms

  5. Roll dough out between two sheets of greaseproof paper to stop it form sticking.

  6. Using a circle cookie cutter punch out 8 circles. Place them on the prepared baking tray and bake in the oven at 180c for 7-9 minutes. Until the edges start to brown.

  7. Remove from oven and leave to cool on a the baking tray for 5 mintues to frim up. Then move to a cooling rack to cool down completely.

  8. Remove caramel sauce from the fridge.

  9. Spoon 1 tsp of the caramel on to the top of one cookie and smooth out. Then drizzle over about 1 tsp of melted chocolate. Place on a plate and do the same to the other 7 cookies. Put the plate into the fridge until the chocolate sets.

  10. Store the finished cookies in an airtight container in the fridge as this helps to keep the caramel firm makes the cookies less messy.
