When I want a cookie I don’t want to wait. As these cookies don’t spread when baked. This means you don’t need to chill the dough first. Which speeds up the cookie making process, so you can satisfy that cookie craving even quicker.

Customising Your Trail Mix Cookies  

The best apart? Making your own trail mix cookies is super easy.  

Add-ins: chocolate chips, pumpkin seeds, flax seeds, linseeds, flaked almonds, shredded coconut, walnuts, Brazil nuts, dried fruit. The options are endless, pick your favourites and get baking. Make sure you chop up the nuts. Just keep the amount of add ins the same to be sure your cookies turn out to be delicious.

Ingredients For Trail Cookies  

Gluten free plain flour  

Buckwheat flakes  

Dairy free butter  

Coconut sugar  

Aquafaba (liquid from a can of chickpeas)  

Baking soda  

Vanilla extract  

Seed mix  

Almonds  

spoonful of buckwheat flakes

Nut and Seed Granola (GF, VG, OF)

Final Result

Ingredients

  • 130 grams Plain GF flout
  • 70 grams Buckwheat flakes
  • 50 grams Dairy free butter (soften) i used Pure
  • 60 grams Coconut sugar
  • 4 tbsp Aquafaba (whipped) Liquid from a can of chickpeas
  • 20 grams Mixed seeds
  • 10 grams Almonds (chopped)
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tso Mixed spice
  • 1/2 tsp Nutmeg

Instructions

  1. In a small bowl drain the liquid from the can of chickpeas. Whisk until it becomes frothy.

  2. Combine the flour, baking soda and spices in medium bowl. Stir to combine

  3. Cream the butter and sugar together in a small bowl.

  4. Add the whipped aquafaba to the creamed butter and sugar. Mixed to combine

  5. Pour the wet mixture into the dry ingredients. Stir to combine until smooth dough is formed.

  6. Divide cookie dough into 8 balls. i used a two tbsp measure to create 8 equal balls.

  7. Place the cookie dough onto a lined baking tray. Bake in the oven at 180c for 6-8 minutes

  8. Remove from oven and leave to cool on the baking tray for 5 minutes to allow the cookies to firm up. Before moving them to a wire rack to cool completely. Store in an airtight container for 5 days.
