These sweet potato tofu quinoa burgers are gluten free,vegan and oil free they only require 4 main ingredients and 30 minutes to bake. Crispy on the outside while still soft and tender in the middle. These are perfect for meal prep as they pair well in a gf bun, lettuce wrap or in a salad to keep meal time interesting all week long.

I don’t know about you but when someone says vegan burger to me I instantly think of a bean burger. Now am sure they are great but as someone who can’t tolerate beans then it becomes a little trickier to find a vegan burger. Am not vegan but that doesn’t mean I can’t enjoy a non-meat alternative, especially when meat burgers tend to have wheat flour added to help them bind together.

Lentils are also a common ingredient in vegan burgers, again a problem as I can’t eat them either. Oh, the joys of having such a sensitive stomach. Here’s the good news you don’t need any of the aforementioned ingredients to create an easy flavourful burger recipe that you can customise with different herbs and spices. These also go great with just about anything. My favourites are in a gf bun or in a sandwich, on top of a big chopped salad or simply wrapped in romaine lettuce leaves the choice is yours.

As mentioned above they only take 30 minutes to bake in the oven but to save on prep time you can use pre-cooked quinoa and pre-diced sweet potato if you wish. Also buying extra firm tofu will save you time when pressing it as there won’t be as much liquid to squeeze out. The brand I always use is The Tofoo Co. There’s comes in very little liquid compared to other brands and are vacuum packed.

The herbs and spices used in this recipe are all optional. You can swap the asafoetida and fenugreek powder for garlic and onion if you can tolerate them. Get creative and come up with your own flavour combinations. Herbs and spices are my favourite way to keep meal prep interesting and enjoyable throughout the week.

  • 150 grams unsmoked extra firm tofu
  • 60 grams uncooked quinoa
  • 60 grams chopped tomatoes from a tin
  • 170 grams diced sweet potato

optional seasonings

  • 1 tsp smoked paprika
  • 1 tsp sage
  • 1/2 tsp ground corriander
  • 1/2 tsp asafoetida powder
  • 1/2 tsp ground fenugreek
  • 1/4 tsp cayenne pepper
  • salt to taste


  1. Rinse quinoa under running water. Then cook according to package instructions. I cook mine in 1 cup of water. Bring it to a boil then simmer with the lid on for 15 minutes, 

  2. While quinoa cooks, peel and dice your sweet potato then microwave it for 8-10 minutes until soft. 

  3. Drain and press tofu. I squeeze my tofu between a few layers of paper towel. Then roughly dice it up.

  4. Once your quinoa and sweet potato is cooked. Add everything to a food processor along with your choice of seasoning and blend until everything is fully incorporated. 

  5. Your mixture should be a scoopable consistency. I used a 1/4 measuring cup to scoop out the mixture and make 7 burger patties. Place them onto a grease proof lined baking tray. Flatten out the pstties to your desired thickness. 

  6. Bake at 200c or 375f for 20 minutes flip them over and bake for a further 10 minutes. 

  7. Either serve immediately or leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely. Store them in an air tight container in the fridge for 3 to 5 days. 

  8. Heat them up on in non stick frying pan for a few mintues to keep the crispy outside.
