Spiced Apple Loaf (Gluten Free, Dairy Free)

Soft and fluffy this sweet apple spiced loaf is packed full with juicy homegrown apples and warming spices. Perfect way to kick start Autumn. 

It’s Fall Y’all

It’s apple picking season yay! Since I have an apple tree in my garden. It’s a short walk to the bottom of my back garden to grab some apples.  

When the weather starts to turn colder and the apples start to ripen. It’s officially Autumn. Which means I can start baking all the wonderful Autumnal desserts.  

Between September and December is my favourite time. As I love all the warming spices like cinnamon, ginger, nutmeg and more.

The weather may not be my favourite as here in Scotland we tend to have quite a wet and windy winter. But all the amazing food certainly makes up for it.  

Expect a lot more Apple inspired recipes. As I have a barrel load of apples to get through.  Hence why i made this spiced apple loaf.

Reasons Why I love This Spiced Apple Loaf

Now I wanted something I could pack for lunches and as a afternoon treat with a cup of tea. This delicious apple spiced loaf is the perfect solution.  

It’s fluffy, moist and packed full of juicy apples and warming spices. The mix of cinnamon, ginger and nutmeg are perfect for those colder nights.

Spiced Apple Loaf (Gluten and Dairy Free)

Soft and fluffy this sweet apple spiced loaf is packed full with juicy homegrown apples and warming spices. Perfect way to kick start Autumn.

Ingredients

  • 300 grams Plain gluten free flour (without xantham gum)
  • 40 grams Coconut sugar
  • 2 tsp Baking powder
  • ½ tsp Baking soda
  • 3 tsp Cinnamon
  • 2 tsp Ground ginger
  • ½ tsp Nutmeg
  • 40 grams Dairy free butter i used the brand Pure
  • 4 medium Eggs around 180g
  • 200 grams Apple Sauce Homemade or a low sugar store brought one
  • 100 grams Grated apple
  • 40 grams Diced apple

Instructions

  1. Preheat oven to 180c. Then grease and flour a 1l loaf tin.  

  2. In a medium sized bowl combine all dry ingredients together. 

  3. Melt butter in the microwave for 20 seconds.  

  4. In another medium sized bowl add all the wet ingredients together. The stir to combine

  5. Grate Apple and dice apple. Then add to the wet mixture

  6. Add the dry mixture to the wet mixture a 1/3 at a time and stir well to combine. Making sure there is no dry clumps of flour left. 

  7. Pour the batter into the prepared loaf tin. And bake it on the middle shelf for 25-28 minutes at 180c

  8. Remove from oven and test the centre with a tooth pick or skewer. If it comes out clean, then it’s ready

  9. Leave to cool in the tin for 5 minutes

  10. Then remove from tin and leave to cool completely on a cooling rack. Before slicing

  11. Store any leftovers in an airtight container in the fridge. For up to 5 days.
