Soft gingerbread men are a holiday staple. The warming spices and soft biscuit is the perfect Christmas treat. Gluten free and vegan for all the family to enjoy.

Sugar and spice and all things nice. You canโ€™t have Christmas without gingerbread men. Am I right?

I love this time of year since ginger, cinnamon, cloves and nutmeg are my favourite spices.

How to Decorate the Gingerbread Men.

Whether you choose to ice the soft gingerbread men like I did. Or leave them plain, they are just as delicious. Am not the best at decorating cookies. These took me around an hour to decorate. I wouldn’t normally bother to ice them if it was for me to eat.

Normally i would dip half the gingerbread man into chocolate. I did that last year and it was great. You could also keep it simple and dust them in icing sugar.

Ingredients Needed

  • GF plain flour
  • Almond flour
  • Coconut oil
  • Baking powder
  • Gingerbread Fruit Syrup
  • Coconut milk
  • Coconut sugar
  • Cinnamon
  • Ginger
  • Nutmeg
  • Mixed spice
  • Ground cloves

Molasses Yay or Nay

This year i wanted to try making a gingerbread cookie recipe that didn’t use any molasses/treacle. Not everyone is a fan of that strong slightly bitter taste.

Every year i buy a tin of molasses and only use a few tablespoons of it for some Christmas baking. This year i didn’t want the tin of molasses to go to waste. The finished cookie recipe turned out great and it still had all the delicious flavours of a traditional soft gingerbread men.

No Chill Dough

As much as i love baking, i hate waiting. That’s why i usually make recipes that don’t require to much down time. There are a few recipes that chilling is necessary but they are few and far between.

That’s why this soft gingerbread men recipe doesn’t require you to chill the dough before you cut out your cookies. They don’t spread in the oven either so hold their shape when baked.

What Gluten Free Flour To Use

The problem with gluten free flour is that each brand uses a different mix of flours. Which means that the margin for error is much greater. To make it easier to replicate the finished product. Its best to use the same flour as the recipe calls for.

This isn’t always easy to do, especially if the recipe is from another country. I find that a lot of recipes i come across use Bobs red mill gluten free 1 to 1 baking flour. Having never tried it as its not easy to get where i live in Scotland.

My go to plain flour is from Asda its their own brand flour. It contains a mix of rice flour, potato starch and maize flour. Then their self raising flour contains a mix of Rice flour, tapioca starch, potato starch, maize flour, raising agents (calcium phosphates, sodium carbonates) and thickener (xanthan gum).

Ingredients

  • 175 grams GF plain flour
  • 30 grams Almond Flour
  • 40 grams Coconut oil
  • 30 grams Gingerbread fruit syrup i used Sweet Freedom brand
  • 25 grams Coconut sugar
  • 4 tbsp Coconut milk
  • 1/2 tsp Baking powder
  • 2 tsp Ground cinnamon
  • 2 tsp Ground ginger
  • 2 tsp Mixed spice
  • 1 tsp Ground cloves
  • 1/2 tsp Nutmeg

Instructions

  1. Pre heat oven to 180c and line a baking tray with greaseproof paper

  2. In a large bowl mix together the dry ingredients including the sugar.

  3. Melt the coconut oil in the microwave for 20-30 seconds.

  4. Add the melted coconut oil, gingerbread syrup and coconut milk to the dry ingredients. Stir until well combined and the mixture forms a ball.

  5. Roll the dough out onto greaseproof paper to the thickness of around 3mm thick. They will rise slightly on the oven.

  6. Using a small gingerbread man cookie cutter and any other cookie cutters you have. Cut out around 16 cookies depending on the size of your cutter.

  7. Place the cookies onto the lined baking tray and bake in the oven at 180c for 8-10 minutes.

  8. Remove from the oven and leave to cool on the baking tray for 5 minutes to firm up.

  9. Leave the cookies to cool completely on a wire rack before decorating.

  10. Store the cookies in a airtight container for 3-5 days.
