Healthy and easy slow cooker ham, potatoes and veg. Dinner doesn’t get much easier than this. Dump everything in at the same time set the temperature and leave it to cook. Perfect for those busy days when you don’t have time to cook but still want something healthy yet filling and tasty. Gluten free dairy free and low FODMAP.  

Who hates washing the dishes? ….. ME!!! Don’t worry though I’ve got you covered with this slow cooker ham, potatoes and veg recipe. 

Dump all the ingredients into the slow cooker set too high for 3 hours and walk away. Doesn’t get much easier than that.

Slow cookers are great for those busy days, when you know you are going to be out the house most the day. Yet you still want a tasty filling meal to come back to.  

There are a thousand and one recipes out there to keep meal times interesting all week long too. I’ve seen one for banana bread which I think sounds really interesting. Since I have only ever made it in an oven before.

Ingredients needed: 
  • Smoked gammon joint
  • White potatoes
  • Carrots
  • Cauliflower
  • Broccoli
  • GF Low FODMAP ham stock cube
  • Water
  • Black pepper
  • Mixed dry herbs

Serving size 3-4 

Final result turned out great. I love how easy and tasty this meal was. I saved the leftovers for work the next few days. Simply store the leftovers in an airtight and microwave safe container. Heat up the leftovers in the microwave and you have a healthy lunch ready to go.

Ingredients

  • 750 grams Smoked gammon joint
  • 4 medium White potatoes
  • 1 medium Carrots
  • 6 Broccoli florets frozen or fresh
  • 6 Cauliflower florets frozen or fresh
  • 1 GF Low FODMAP ham stock cube i used knor ham stock cube
  • 500 ml Water
  • 1/2 tbsp Black pepper
  • 1 tbsp Dry mixed herbs

Instructions

  1. Remove all the packaging from the gammon joint and place in slow cooker. Along with 2 cups of water and the crumbled up ham stock cube.

  2. Chop potatoes into quarters and chop up broccoli and cauliflower if your using fresh. Add to the slow cooker. 

  3. Season everything with black pepper and dry mixed herbs. Place the lid on the slow cooker and set to high for 3 hours or low for 6.

  4. Once done remove the gammon joint and make sure its cooked through before serving.

  5. Slice the gammon joint and pair it with the potatoes, carrots, cauliflower and broccoli. Save any leftover liquid as stock. Which can be used in my pea and ham soup. (link in post above)
