Ooegy gooey salted caramel encased in raw dark chocolate does it get much better than that! I think not. These salted caramel rolos are gluten free vegan and refined sugar free but equally as mouth-watering and addictive as the originals. Easy to make with only 5 ingredients that you probably already have in your cupboards.

Chocolate overload is happening on the blog right now. These salted caramel rolos are the fifth chocolate recipe in a row. It all started when I bought a 500g bag of raw cacao powder from Costco. Of course, it sent my mind racing with 101 ideas on how to use it. Creating my own raw chocolate has got to be my favourite way of using it and the reason why I have finished the whole bag in under 4 weeks!

Yes, I think its save to say that I Emma am a chocolate addicted. Is there a chocolate anonymous group I could join haha!

Now let’s talk about these salted caramel rolos. First thing first heres the link to the raw chocolate bark recipe where I the chocolate addicted really hit me. Next is the super easy salted caramel sauce for the filling to these beauties.

I had never made caramel sauce until I tried making these toffee crisp bars click here for that amazing recipe. You can either use the caramel sauce recipe from that post if you would like a thicker more set kind of caramel. Otherwise you can use the recipe below for a more runny caramel which I personally prefer.

For that ooegy gooey caramel filling then you will want to use the caramel recipe below. Confession time this caramel sauce is also great to drizzle over popcorn to create a yummy salted caramel popcorn. So even if you don’t want to make the whole recipe I definitely suggest just making this sauce. You can store it in the fridge and drizzle it over just about anything! 

Rolos were one of my favourite chocolates growing up, I love there slogan too. “Do you love anyone enough to give them your last rolo?” Of course, I was a nice child and always offer someone if that wanted to share… well most of the time at least.

The originals are made by nestle and are already gluten free but do contain milk and a lot of refined sugar. Hence why I wanted to create my own recipe and let me tell you these didn’t disappoint one bit. Self-control is needed here so you don’t devour them all in one go. Honestly, I ate three of them just when I was shooting the pictures, they’re just too easy to pop in your mouth again and again and again haha.

Ingredients

Raw Dark Chocolate

  • 40 grams raw cacao powder
  • 30 grams coconut oil (melted)
  • 10 grams powdered coconut sugar

Salted Caramel

  • 70 grams coconut sugar
  • 190 ml unsweetened almond milk
  • 20 grams coconut oil
  • 1 tsp salt, adjust to taste i used pink Himalayan

Instructions

Raw Dark Chocolate

  1. In a small bowl mix raw cacao powder, melted coconut oil and powdered coconut sugar together. To form a thick but runny chocolate.

Salted Caramel

  1. In a small sauce pot over low-medium heat add almond milk, coconut sugar and coconut oil. Stir to combine. 

  2. Bring caramel to a rolling bowl then reduce to a simmer for 10-15 minutes. Stirring occasionally until the liquid has reduced down to a thicker sauce like consistency. 

  3. Add salt and stir to combine. Leave to cool. 

Assembly of rolos

  1. Using a silicone mould i chose to use a small round chocolate mould for these. Add 2/3 of your raw chocolate to the bottom and sides of each cavity, Place in fridge for 10-15 minutes to set.  

  2. Remove mould from fridge and divide your caramel sauce between each cavity. Return to fridge for about 20-30 minutes to firm up the caramel, It will remain slightly running.

  3. Remove mould from fridge and add the other 1/3 of your raw dark chocolate on top of the caramel to seal. Place in fridge one more time for 10 minutes to set the chocolate. 

  4. Once set carefully pop each rolo out and enjoy. Keep these rolos in the fridge until ready to eat. As the chocolate will melt otherwise because of the coconut oil.
