These Rice Krispie cups are a kid friendly recipe that are perfectly portioned for easy snacking. Wonderfully delicious and simple to customise making them a easy 4 ingredient fun activity for everyone to enjoy. Gluten free and vegan. 

The Easiest Rice Krispie Cups  

Seriously, 3 ingredients to make a basic version and 4-5 ingredients to make chocolate or flavoured versions. They are that simple albeit a bit sticky to make. Great recipe for kids to help with since they can mix the marshmallows and rice puffs together. Then help scoop them into the silicone muffins cups and decorate them once set.  

Where to Find Vegan Marshmallows 

Vegan marshmallows have become easier to find in major supermarkets nowadays. Asda sell the dandies brand and when Aldi has their special events during veganury which is in January they sell their own version of vegan marshmallows. If you can’t find them instore then there is plenty of places online to buy them from. Freedom Mallows are a great company for all things vegan marshmallow related, including a marshmallow bar coated in chocolate YUM!

Ingredients Needed for Rice Krispie Cups 

Rice puffs (make sure they are gluten free) 

Vegan marshmallows  

Dairy free butter 

Vegan chocolate  

Sprinkles are optional (make sure they are gluten free) 

How to Customise Rice Krispie Cups 

The possibilities are endless but here are a few of my favourites. Chocolate, peanut butter or flavourings such as mint, orange and strawberry. You can get creative with the decorations too. Try drizzling white chocolate over the top or coating the entire thing in chocolate for a crunchy snap to the soft and gooey treat inside.

How to Store Rice Krispie Cups 

Wrap the krispie treats in grease proof paper to stop them sticky to each other. Store at room temperature or in the fridge if you live in a hotter climate than the UK.

Ingredients

  • 140 grams Rice Puffs (make sure there gluten free)
  • 90 grams Dairy free butter
  • 180 grams Vegan marshmallows
  • 30 grams Dairy free Chocolate
  • 1 tbsp Sprinkles (make sure there gluten free)

Instructions

  1. Blitz the rice puffs in a food processor for a few seconds. To make them smaller. You don’t want crumbs. 

  2. Over a low heat add the butter and marshmallows to a large pot and stir until melted.

  3. Add rice puffs and stir to coat evenly.

  4. Scoop mixture into silicone muffin tray. Press down with the back of a spoon.

  5. Leave to set for 1hr 30 in the fridge or until firm.

  6. Melt chocolate in the microwave in 10 seconds burst until melted.

  7. Add 1 tsp of melted chocolate to the top of each cup and either add sprinkles or cut up pieces of marshmallow and place on top. Leave to set then enjoy

  8. Store the cups in an airtight container. Best eaten within 2-3 days.
