A seasonal version of the very popular baked oats trend. These pumpkin pie spice baked oats are super easy to make and taste delicious. Simple to adapt to any dietary requirements and make a great meal prep breakfast. Gluten free and vegan with an oat free option.

Baked Oats

One of my most favourite breakfast to meal prep. I honestly eat baked oats 6 days a week for me its a super simple breakfast to take to work with me. The recipe for that is already up on the blog if you want to check it out. Chocolate Protein Baked Oats. For this seasonal version i removed the cacao powder and added ground ginger, nutmeg and ground cloves. I also used vanilla protein powder but that is optional.

Meal Prep Friendly

Oats in general make a great healthy filling breakfast. So versatile as you can use them to make oatmeal, overnight oats or baked oats. For this recipe i choose the baked version but this recipe can be adapted to make oatmeal or overnights oats. This recipe makes four portions but can be easily doubled if you have a bigger family. I make this just for myself so find that four portions last well in the fridge. Simply heat it up in the microwave for 1 minute if you like it warm or eat it cold if you prefer.

Ingredients Needed For Pumpkin Pie Spice Baked Oats

  • Gluten free oats (or rice flakes, buckwheat flakes)
  • Vegan gluten free protein powder (optional)
  • Ground cinnamon
  • Ground ginger
  • Ground cloves
  • Ground nutmeg
  • Non dairy milk
  • Liquid sweetener

Ingredients

  • 165 grams Gluten free oats Or rice flakes/buckwheat flakes
  • 55 grams Vegan gluten free vanilla protein powder optional
  • 1 tsp Ground ginger
  • 1 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/4 tsp Ground Cloves
  • 500 ml Non dairy milk
  • 15 grams Liquid sweetener

Instructions

  1. Preheat oven to 180c and lined a deep square baking dish with greaseproof baking paper.

  2. In a medium sized mixing bowl combined all the dry ingredients together. If your not using the protein powder then add add an extra 50 grams of oats.

  3. Add in the non dairy milk and liquid sweetener. You can add more sweetener if you prefer.

  4. Still all the ingredients together. Making sure there is no dry lumps left.

  5. Pour mixture into the lined baking dish.

  6. Bake at 180 for 20-25 minutes. Until the top starts to turn golden brown and crackled.

  7. Leave to cool before removing for the dish and cutting into quarters.

  8. Store in an airtight container in the fridge for up to 5 days. Reheat for 1-2 minutes in the microwave if you like to eat it warm.
