Pancake day 

Pancake day or Shrove Tuesday is fast approaching. Be ready with these super easy 5 ingredient protein pancakes.

If you’re not from the UK then you might not know about this day of celebration. Oddly enough the exact date for this event changes every year. This is because it’s based off when Easter falls. The two things that stay consistent is firstly that it always falls the day before Ash Wednesday (the first day of lent). Secondly is always falls in either February or March.  

Last year pancake day actually fell on my birthday in March. To mark this occasion, I made an illusion cake that looked like a stack of pancakes with syrup and a knob of butter on top. Inside was a layer of chocolate cake and a layer of lemon cake. All covered in vanilla buttercream and then fondant to make it look like a stack of pancakes. Not sure how I will top it this year as it was pretty darn delicious and looked very cool.

Easiest pancake recipe  

For this easy pancake recipe all you need is 5 simple ingredients. Which you can pick up any major supermarket.  

Gluten free plain flour

Peanut flour

Egg

Dairy free milk

Baking powder

Which Gluten free flour 

When making any recipe using gluten free flour, they are all slightly different in ingredients. Most use similar mixtures of flours to create a gluten free flour blend. The ratios might differ from brand to brand and some use xanthan gum some do not. Always check to see if your blend contains xanthan gum it as it can make a big difference to the final result. 

I used Asda’s own brand of gluten free flour it uses rice flour, potato starch and maize flour. It does not contain xanthan gum which I prefer as then you have the option to add it in if needed. For the protein pancake recipe, I don’t think you need it as they hold together great and have the fluffy texture you would expect for a pancake. 

Usually I only add xanthan gum to biscuit and pastry recipes since I want them to hold together better and not be too delicate and hard to handle.

Protein pancakes made with no protein powder 

Yes, that’s right I didn’t use any protein powder for this recipe. Instead I used Hi Pro peanut powder. I buy it from Sainsburys and it’s a 100% peanut flour. By substituting some of the plain gluten free flour for this peanut flour. You get an extra kick of protein with less carbs. The overall taste doesn’t change much. Personally, I can’t taste the peanut flavour in the final pancake especially once all the toppings are added.   

Make ahead dry mix 

Make this protein pancake recipe even easier and make the dry mixture up ahead of time. Then store it in an airtight container ready for you to add the wet ingredients. Creating in affect your own store-bought pancake mix. Only healthy with less ingredients and the ability to cater it to your own dietary or taste requirements.

Delicious fluffy pancakes that are easy to make with minimal ingredients and turn out great every time. Great for a quick breakfast or less face it perfect for dinner as well because who doesn’t love brinner.

Ingredients

  • 50 grams Plain gluten free flour
  • 20 grams Peanut flour
  • 65 ml Dairy free milk
  • 1 large Egg
  • 1 tsp Baking powder

Instructions

  1. In a small mixing bowl add all the dry ingredients and mix to combine.

  2. Add the wet ingredients to the dry mixture and stir to combine. Making sure there are not lumps,

  3. Heat a large frying pan on the hob over a medium-high heat.

  4. Add 1/4 cup of the pancake batter to the frying pan. Once little bubbles start to appear on top of the pancake then its ready to flip over.

  5. Leave the flipped pancake to cook for 2-3 minutes until golden.

  6. Remove the pancake and set aside. Cook the remaining batter the same way as the first one.

  7. Add your choice of toppings to the stack of pancakes and enjoy.
