Fudgy, moist and filled with a delicious minty flavour. These gluten and dairy free peppermint brownies are a must this holiday season. An easy one bowl recipe that can be made in under 45 minutes. Just tried not to eat them all in one go!

Let’s just start with how YUMMY! These peppermint brownies turned out.

Candy canes are one of my favourite sweets. So much so that I stock pile boxes of them to keep me going for a few months after Christmas is over.

Now this certainly isn’t the first brownie recipe I have made for this blog. Safe to say I am a bit of a brownie addict. Which isn’t a bad thing after all.

Back to these peppermint brownies here’s what you will need:

  • Almond flour
  • Arrowroot powder
  • 70% dark chocolate chocolate
  • Coconut sugar
  • Eggs
  • Dairy free butter
  • Peppermint cream sweets
  • Candy Cane
  • Peppermint extract
  • Vanilla extract
  • Baking powder
  • Salt

You’ve got to love a one bowl recipe. Let’s face it the fewer dirty dishes the better, especially since I don’t have a dishwasher.

In preparation for this recipe I wanted to research the best brownie recipe out there. For this I turned to Tasty. As they always go all out for their recipes. Of course, most of them aren’t gluten or dairy free. Although I did find one for vegan brownies.

After watching several different recipe videos. I jotted down some of the best tips from each video and them set about twerking it to make it suitable.

The end result was a simpler but just as delicious fudgy gooey peppermint brownie. I love how these looked almost as much as how they tasted.

Like most of the recipes I make for this blog, I took the leftovers to work with me. Everybody loved them and thought it was a great idea. Brownies are one of the most common treats I take to work with me. People really like the chocolate peppermint combo there are reminiscent of After Eight chocolates you can get here in the UK.

Ingredients

  • 75 grams 70% dark chocolate
  • 50 grams dairy free butter i used Pure brand
  • 30 grams coconut sugar
  • 30 grams raw cacao powder
  • 1 tsp peppermint extract
  • 1/2 tsp vanillia
  • 2 large eggs
  • 25 grams Almond flour
  • 10 grams arrowroot powder
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 3 peppermint cream sweets
  • 1 candy cane

Instructions

  1. Pre heat oven to 180c (350f)

  2. Add coconut sugar, 25 grams of the dark chocolate, cacao powder to a medium size bowl,

  3. Melt butter in the microwave

  4. Pour melted butter into the medium sized bowl and mix to combine. This should start to melt the chocolate. Continue stirring until smooth.

  5. Stir in peppermint and vanilla extract 

  6. Whisk one egg into the mixture first then the remaining egg after. Making sure to scrape down the sides of the bowl.

  7. Next add the almond flour, arrowroot powder, baking soda and salt to the bowl. Stirring well to completely  combine everything together. 

  8. Chop up 25 grams of chocolate along with the three peppermint cream sweets. Stir the into the mixture.

  9. Line a small deep square baking pan with grease proof paper. Pour brownie mixture into the pan and smooth out the top.

  10. Bake in the oven at 180c for 8 minutes. Then remove and tap the baking pan on your work surface to crack the top and even everything out. Return to oven for another 7 minutes.

  11. Remove brownies from the oven and leave to cool in the pan for 5 minutes. Then remove for the pan to cool on a wire rack until completely cool.

  12. Crush the candy cane with a rolling pin. 

  13. Melt the remaining 25 grams of chocolate in the microwave for 45 seconds. 

  14. Drizzle the melted chocolate over the brownies and sprinkle the crushed candy cane on top. 

  15. Let the chocolate set before slicing them into 16 squares. 

  16. Store in an airtight container for up to 5 days. Enjoy.
