These soft baked cookies are the perfect combination of sweet and nutty. Making these orange, hazelnut and cranberry cookies a great easy treat to make for the whole family. As they are gluten free, vegan and takes less than 30 minutes to make.

How to Make These Cookies Gluten Free and Vegan.

For the flour I used the Asda own brand gluten free plain flour. Which is a mix of rice flour, potato starch and maize flour. I don’t use any xantham gum in this recipe as i don’t think it needs it. If you use it keep in mind it will change the texture of the final cookie.

For the butter I used the brand Pure free from. They make a variety of different kinds I used the olive spread for these cookies. I didn’t use any eggs or egg replacements.

Ingredients Needed For These Orange, Hazelnut and Cranberry Cookies.

•Gluten free plain flour

•Dairy free butter

•Coconut sugar

•Hazelnuts

•Dried cranberries

•Orange extract

Tips For Making These Cookies.

•Use room temperature butter.

•Toast the chopped hazelnuts for extra flavour.

•Add the cranberries to some hot water to soften. Which will prevent them from burning in the oven.

•Flatten the cookies down a bit with the back of the spoon. As they don’t spread when baked.

•Once baked leave to cool on the baking tray for 5 minutes to set up. Otherwise, they might break will moved.

Ingredients

  • 150 grams Gluten free plain flour
  • 80 grams Dairy free butter
  • 50 grams Coconut sugar
  • 1 tsp Orange extract
  • 30 grams Chopped hazelnuts
  • 15 grams Dried cranberries

Instructions

  1. Preheat oven to 180c and line a baking tray with grease proof paper.

  2. Cream butter and sugar together in a medium size mixing bowl. Add in orange extract and stir to combine.

  3. Add flour and mix to combine.

  4. Add chopped hazelnuts and dried cranberries stir to combine.

  5. Scoop cookie dough onto lined baking tray. i used 1 tbsp per cookie. Flatten each cookie down as they don't spread in the oven.

  6. Bake at 180c for 10-12 minutes until the edges turn golden brown.

  7. Remove from oven and leave to cool on the baking tray for 5 minutes. Then move to a cooling rack to cool completely.

  8. Store cookies in an airtight container for up to 5 days.
