These no bake sweet potato brownies are great for a summer time treat as there is no need to turn your oven on for fudgy rich chocolate brownies. With only 6 ingredients these are naturally gluten free, vegan, oil free and grain free. YUM!

Brownies have taken over my life recently, not that am complaining. I don’t consider myself to have much of a sweet tooth these days. Except for dark chocolate the darker the better. Scotland is having its warmest summer in FIVE YEARS. What better time to test out some no bake desserts. There is a vast array of ways to make brownies, simply type brownie recipe into Pinterest and you will be spoilt for choice. Beware though you might get sucked into the vortex that Pinterest can be. Many a times I have gone on to find some inspiration and next thing I know it’s 2 hours later. I have completely forgotten what I went on to look for in the first place.

Coincidently my oven decided to break 2 days after making these! Since then I have tested out 3 new no bake treats, each will be coming soon. Shopping for a new oven has been a lot more fun than I thought it would be. Adult life is full of fun times like these haha! I also hadn’t realised how much I rely on one, not just for food blog related things.

Cooking takes up a lot of my free time, meal prep is a life saver though. Tuesdays are normally my meal prep days. Having food already prepare and ready to eat in my fridge saves me from eating all the yummy treats I recipe test. When you become a food blogger you can easily gain weight since each recipe usually takes 3 or 4 attempts to get right. To combat this, I give most of it away to friends and family to eat.

These no bake sweet potato brownies will save you from having to turn on your oven (if you have one!) and make your house even hotter. Better still they only contain 6 ingredients. To cook the sweet potato, I used a microwave this makes it quick and easy. Once cooked scoop the potato out from the skin and its ready to be used.

To make these brownies grain free and gluten free use coconut flour and to replace the butter and oil use a running nut butter. It’s important for your nut butter to pour off your spoon and not be too thick since we aren’t using any butter or oil.

Next use a liquid sweetener to replace the refined sugar normally used for brownies. For this I used a fruit syrup made by Sweet Freedom, I have use this in a lot of my previous dessert recipes. Alternatively, you could use maple syrup or honey if you don’t need them to be vegan.

Like I said earlier raw cacao powder is disappearing at an alarming rate in my house. It provides the rich chocolately taste in this recipe. Combined with the dark chocolate bar I melted to drizzle over the top of these brownies.

Ingredients

  • 200 grams Sweet potato
  • 100 grams Runny almond butter or other nut butter
  • 55 grams Coconut flour
  • 25 grams Dark chocolate 70%
  • 20 grams Raw cacao powder
  • 20 grams Fruit syrup or other liquid sweetener

Instructions

  1. Poke holes in the sweet potato. Then cook in microwave for 10- 15 minutes until soft. Cut open and allow to cool slightly. 

  2. Scoop out the soft potato and discard the skin. Mash until smooth.

  3. In a medium sized mixing bowl combine all ingredients except dark chocolate. Mix it all together until the batter is smooth. 

  4. Line a square deep dish with grease proof paper. Add batter to the dish and spread out to create an even layer. 

  5. Melt dark chocolate in the microwave for 30 seconds be careful not to burn it.  Drizzle melted chocolate over brownie batter.

  6. Place brownies into the fridge for at least 30 minutes to firm up. 

  7. Remove from fridge and slice into 16 bars. Store them in an airtight container in the fridge for up to 5 days.
