Mincemeat Stuffed Cookies (GF, DF)

Love the flavour of mince pies but not the hassle of dealing with pastry. Then make these quick and easy mincemeat stuffed cookies. They taste like a mince pie crossed with a soft baked cookie, what’s not to love about that. These cookies are also a great way to use up any leftover mincemeat after Christmas is over.

Re-imagine the classic use for mincemeat with these delicious and easy mincemeat stuffed cookies.  

Mincemeat and Christmas are synonymous with each other. You can use a store-bought mincemeat if your short on time. I make my own as I can’t eat raisins. Check out that recipe here.  

This year I created a new one recipe without the use of dates. You can add whatever dried fruit, spices, liquid and alcohol you like.

Dried fruit- dried cranberries, goji berries and flaked almonds. 

Liquid- orange juice, water and gingerbread gin.

Spices-   Cinnamon nutmeg ground cloves mixed spice 

Adding alcohol is optional you can substitute it with either water or orange juice.

Make them vegan 

The mincemeat is already vegan and you can also find store bought mincemeat that is accidently vegan. To make the cookie dough vegan swap out the egg for aquafaba. Check out this cookie recipe here for a vegan cookie dough.

Final result  

These cookies turned out seriously delicious with the great festive flavours of a mince pie but the soft slightly crumbly cookie texture. Its a great way to continue to eat mincemeat in the new year.

Ingredients

  • 4 tbsp Mincemeat
  • 125 grams GF plain flour
  • 50 grams Almond flour
  • 30 grams Coconut sugar
  • 50 grams DF butter i used pure brand
  • 1 medium Egg
  • 1 tsp Cinnamon
  • 1 tsp Mixed spice
  • 1 tsp Ground cloves
  • 1/2 tsp Baking powder

Instructions

  1. Pre heat oven to 180c and line a baking tray with greaseproof paper

  2. Cream together eggs and sugar in a medium sized mixing bowl

  3. Add beaten egg into the creamed butter and sugar and stir to combine

  4. In a small bowl mix together the both the flours and all the spices.

  5. Add the flour mixture into the wet mixture half a time. Stir to incorporate.

  6. Either using a small cookie scoop or a two tablespoon measure. Created 12 balls of dough.

  7. Flatten 6 of the dough balls out and place 2 teaspoons of mincemeat into the centre.

  8. Flatten the other 6 dough balls and place on top of the mincemeat to seal the two halves together and create one cookie. Make sure to crimp the edges so no mincemeat leaks out.

  9. Place the cookies on the lined baking tray and bake at 180c for around 8 minutes until the cookies crack on top and have browned slightly.

  10. Remove from the oven and leave to cool for 5 minutes on the tray. Then remove to cool completely on a wire rack.

  11. Store in an airtight container for 5-7 days.
