Low fodmap gluten free tomato and red pepper soup
Hey guys today’s recipe is a low fodmap gluten free tomato and red pepper soup. i struggle to find soup i can eat in stores. As most of them contain either garlic, onion or gluten. That’s why i decided to experiment and make my own. The soup turned out really nice and was super easy and quick to make. I love how this turned out and have been experimenting with other kinds like this low fodmap roasted butternut squash and ginger soup. Both the soups make a great meal for the winter as its warming and filling. I paired mine with a tuna sweetcorn sandwich. i used Marks and Spencers without wheat oaty bread. This is one my favourite sandwich bread as it wholes together well and doesn’t crumbled like some gf bread does. This serves 3 people the macros for one serving is 1.3f 10.1c 3.7p.
Low fodmap gluten free tomato and red pepper soup.
This is a super easy and quick soup. That's great for the winter as its filling and warming.
- 2x 400 gram cans of chopped tomatoes
- 128 grams red pepper
- 2 tbsp balsamic vingear
- 1 tsp asafoetida powder
- 1/2 tsp smoked paparika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp dry mixed herbs
- 125 ml water
Chop up the pepper.
Pour both tins of chopped tomatoes and the water into a medium sized pot and turn the stove to medium high heat.
Add balsamic vinegar, spices and herbs.
Bring the soup to a boil then turn it down to a simmer for 15 minutes.
Add salt and pepper to taste. Then turn off the heat.
Add soup to a blender if you want a smooth soup. Or leave as it is if you prefer a chunky soup.
