Jam Filled Vegan Chocolate Bar (GF, No Added Sugar)

Deliciously dark and smooth chocolate with a hidden sweet and fruity jam filling. That compliments the richness of the dark chocolate perfectly. Made with only 6 ingredients to create this simple and delicious chocolate treat. Gluten free, vegan and with no added sugar.  

Life without chocolate is not worth living. That’s why you have to make this jam filled chocolate bar. Just because you can’t eat dairy or choose to be vegan doesn’t mean you should miss out on the delights of chocolate.  

Making your own chocolate 

Its simpler and easier than you might think. With only three ingredients, cacao butter, cacao powder and a sweetener of choice. If you want to make a 100% cacao chocolate bar you don’t need any sweetener.  

What percentage of Cacao? 

Personally a 100% chocolate bar Is very bitter and not very many people would eat it on its own. Which is why you need some kind of sweetener. This way you can created the percentage of cacao that suits your taste best.

For me between 70-85 percentage cacao makes a lovely rich and smooth chocolate, that will satisfy any chocolate craving you have.  

Dark chocolate over milk chocolate 

Realising I could no longer eat dairy was a big lifestyle change. You wouldn’t believe how many food products contain milk. I’ve never actually liked the taste of cow’s milk on its own even when I was a little child, and you use to get the small cartons of milk at nursery.  

Giving up milk chocolate on the other hand was harder. My favourite chocolate bar was galaxy caramel. Finding a milk free chocolate bar usually means buying a higher percentage of cacao. 70% or higher normally means it won’t contain milk but always check the ingredients to make sure as each brand is different.

How to like dark chocolate. 

Overtime your taste do change. Start small and try eating a small amount of darker chocolate more often. Milk chocolate usually has about 22% cocoa solids in it. Try eating a chocolate bar with around 50% cocoa solids. Increasing the percentage of cocoa overtime will allow your taste bud to change and you will start to prefer the darker chocolate.

Ingredients

Chocolate

  • 100 grams Cacao butter
  • 100 grams Cacao powder
  • 15 grams Granulated sweetener i used natvia

Jam layer

  • 100 grams Frozen forest fruit mix
  • 30 ml Water
  • 5 grams Chia seeds

Instructions

  1. In a small microwave safe bowl add cacao butter and melt in 30 seconds blast until fully melted.

  2. Add half the cacao powder and mix to combine. Then add the other half and mix again.

  3. Add granulated sweetener to the bowl and mix to incorporate. Make sure there isn't any lumps of cacao powder left.

  4. Pour melted chocolate into a silicone chocolate bar mould. Filling the cavity 1/3 way full. Let to set in the fridge for around 10-15 minutes until firm.

  5. Add frozen fruit to a small saucepot with the water over a medium heat. Until fruit has thawed and started to boil. Leave to cook for 5 minutes. Add chia seeds and mix. Leave to thicken and cool down.

  6. Once set remove from the fridge and spoon one teaspoon of jam into the centre of the chocolate bar. Leaving a gap around all sides for the chocolate to create a complete seal.

  7. Pour remaining chocolate over the ti of the jam and fill to the top of the moulds. Smooth off the top of each bar with the back of a teaspoon. To create a smooth final finish.

  8. Place chocolate mould in the fridge to set, around 20 minutes.

  9. Remove from the fridge once set. Carefully pop the chocolate bars out their moulds and enjoy.
