Italian Style Sausage Bake (GF, DF, Low Fat)
This one tray Italian style sausage bake couldn’t be easier add everything to a baking tray and pop in the oven for 25 minutes. You’ll have a healthy filling and most importantly a tasty dinner ready to eat. Perfect for any busy day as there’s minimal dishes to do afterwards it’s a win win. Gluten free, dairy free and low fat.
One tray, pan or pot meals have to be my favourite as they are so simple yet still delicious. This Italian style sausage bake is no different. With only 5 main ingredients and 30 minutes you can create this healthy simple and filling dinner.
Am sure and the only one to have over indulged over holiday session. Isn’t that the whole point haha. As long as you enjoyed yourself then it doesn’t really matter. Am I right?
Since its now 2019 (not quite sure where 2018 went but oh well) it’s time to reel it back in, at least for me anyway. The holidays are fun and all but all that sugar plays havoc with my stomach and my skin. It’s time to get back to feeling my best again.
Meal prep is a life saver for me and something I do every week. Utilising all your kitchen equipment is a great way to cut down on time spent in the kitchen. Using the oven for one tray meals, the slow cooker and then the stove top. Means I can usually get a week’s worth of lunches and dinners prepared in 2 hours or less.

This recipe can be easily double or tripled if you have a larger family. Am just cooking for myself though so I used one portion for dinner then the other for lunch the next day.
Finished result turned out great. I love that the potatoes turned out crispy on the edges and soft in the middle. Cut the potatoes up small to make sure they cook at the same time as the sausages and veg. I used lean pork sausages for this recipe to cut down on the fat content but you can swap them out for your favourite kind.

Italian Style Sausage Bake
- 6 GF lean pork sausages
- 4 small White potatoes
- 1 medium courgette (zucchini)
- 1 medium Bell pepper I used an orange one
- 2 tbsp Balsamic vinegar
- 1 tbsp Mixed dry herbs
- 1 tbsp Avocado oil Optional
- Salt and pepper to taste
Preheat oven to 180c (350f) Line a baking tray with tin foil
Slice the bell pepper and courgette and place on the lined baking tray
Chop the potatoes into quarters. You want them fairly small so they cook at the same time as the rest of the ingredients. Place them on the lined baking tray.
Remove all the packaging from the sausages and poke the skins with a fork to stop them from busting when cooked. Place them on the lined baking tray with the rest of the ingredients.
Pour balsamic vinegar over the sausages and vegetables
Sprinkle dried mixed herbs, salt and pepper over everything and drizzle avocado oil over the potatoes if your using it.
Cook in the oven at 180c for 25 minutes. Once done make sure to check the sausages are cooked through until no pink bits remain on the inside.
Serve immediately. Store any leftovers in the fridge for 3-5 days or freeze for longer. Enjoy
