Finally an oat free granola that taste exactly like granola should. Using buckwheat flakes instead of oats to create this crunchy slightly sweet and nutty granola. Perfect for breakfast, as a yoghurt topping or to turn in cookies or bars. Gluten, oat, and oil free as well as vegan.

While oats tend to be the go to base for any granola recipe, they don’t have to be. Although oats are healthy they don’t work for everyone. Which is why I made this honey nut granola as it’s oat free.  

Why Buckwheat Flakes 

Using buckwheat flakes is a excellent replacement for oats. As they have a similar taste and texture. As well as being versatile and can be cooked in the same way as oats.

Tips For Making Honey Nut Granola.  

You’ll want to carefully watch your granola while it’s baking in the oven.  In the matter of 1 minute your granola can go from golden brown to burnt.  

Press the granola mixture into one even layer on the baking. Once baked leave to cool completely then break up into clusters.

Ingredients Needed For Honey Nut Granola  

Buckwheat flakes  

Peanut butter  

Powered peanut butter  

Fruit syrup or another liquid sweetener  

Flaked almonds  

Shredded coconut  

Mixed seeds  

Cinnamon

Ingredients

  • 200 grams Buckwheat flakes
  • 50 grams Pb fit (powdered peanut butter)
  • 40 grams Peanut butter i used crunchy meridian peanut butter
  • 40 grams Fruit syrup or another liquid sweetener 
  • 50 grams Flaked almonds
  • 40 grams Shredded coconut
  • 30 grams mixed seeds
  • 4 tbsp Water

Instructions

  1. Pre heat oven to 180c,

  2. Mix the pb fit and water together,

  3. In a medium size bowl mix the rest of the ingredients expect the fruit syrup

  4. Pour over the pb fit mixture and then the fruit syrup or honey.

  5. Mix everything together making sure all the dry ingredients get an even coat.

  6. Spread the granola mixture on a baking tray in an even layer. I used two baking tray for the mixture.  

  7. Bake at 180c for 10-12 minutes. Checking every 3-4 minutes to make sure it doesn’t burn.

  8. Once the granola has turned golden brown remove from the oven and leave to cool.  

  9. After its cooled down break the granola up with your hands to create clusters.

  10. Store in an air tight container
