Gluten Free Strawberry White Chocolate Cookie Bars (Dairy Free)

Simple and easy gluten free strawberry white chocolate cookie bars. With just a handful of store cupboard ingredients. You can whip up a batch of these cookie bars or blondies. Regardless of the name you know them by. They make a yummy treat to satisfy those sweet tooth cravings.

Gluten Free Strawberry White Chocolate Cookie Bars

These strawberry white chocolate cookie bars are soft, buttery and bursting with flavour. Quicker and simpler to make than individual cookies. Since there is no need to chill the dough or scoop them into balls. You don’t need to worry about them spreading in the oven either.

Blondies or Cookie Bars?

To me these were two different baked treats, Apparently not. Whilst researching different blondies recipes, I keep coming across cookie bar recipes. Which then got me to thinking what the difference was. Turns out not very much.

If you google either gluten free blondies or gluten free cookie bars both types of recipes will come up. When you read through the list of ingredients for both, they are pretty similar. Inclusion, regardless what you call them they turn out to be the same product. For blondies they tend to be a bit more fudgy and under baked. Then for cookie bars they are bake a bit longer and have a more cake like texture. In the end i baked these gluten free cookie bars for a little longer to give the a more cake like texture. Its up to you though how baked you like them.

Ingredients Needed

Gluten free plain flour

Dairy free butter

Coconut sugar

Eggs

Baking powder

Dairy free white chocolate chips

Fresh or frozen strawberries

Strawberry flavouring (optional)

How to Make Gluten Free Cookie Bars

To Begin mix all of your dry ingredients together in a medium sized mixing bowl. Next add in the eggs and melted butter giving it a good stir. Then chop your strawberries into halves or quarters if they are quite big. Add in 3/4 of the white chocolate and 3/4 of your strawberries to the batter. Mix everything together until combined.

Scoop the batter out into a small lined deep rectangle baking dish. Smooth the top over with a spatula or spoon. Sprinkle over the reserved white chocolate and strawberries, lightly push them down into the batter. Bake at 180c for between 10-14 minutes depending on how gooey you want the centre to be.

Ingredients

  • 200 grams Gluten free plain flour
  • 50 grams Dairy free butter
  • 40 grams Coconut sugar
  • 2 Medium Eggs
  • 1/2 tsp Baking powder
  • 8 small Strawberries Fresh or frozen
  • 25 grams Dairy free white chocolate chips
  • 1 tsp Strawberry flavouring Optional

Instructions

  1. Pre heat oven to 180c and lined a small rectangular baking dish.

  2. In a medium sized bowl mix together your dry ingredients.

  3. Melt your butter and add it to the bowl along with the sugar, eggs and optional strawberry flavouring. .

  4. Stir everything together until no lumps of flour remain.

  5. Chop your strawberries into halves or quarters depending how big they are. If your using frozen strawberries like i did then defrost them first and press out some of the liquid.

  6. Stir through 3/4 of the strawberries and 3/4 of the white chocolate chips into the batter.

  7. Scoop out the batter into the prepared baking dish. Smooth over the top with a spatula.

  8. Sprinkle over the remaining white chocolate and strawberries. Lightly pressing them down into the batter.

  9. Bake at 180c for between 10-14 minutes depending on how gooey you want the centre to be. I bake mine for around 14 minutes.

  10. Once baked remove from oven and leave to cool for 5 minutes in the baking dish. Then remove the cookies bars for the baking dish and leave to cool completely on a cooling rack.

  11. Store cookie bars wrapped in foil at room temperature or the fridge if you live somewhere warm. They will last for up to 4 days. You can reheat them a little in the microwave till the chocolate gets melty if you want that just baked taste.
