Gluten dairy and refined sugar free blueberry protein muffins

Here’s an easy one bowl gluten dairy and refined sugar free blueberry protein muffin that you can make in 3o minutes or less and are only 88 calories. With this recipe you really can have your cake and eat it too!
Hey guys today’s recipe is gluten dairy and refined sugar free blueberry protein muffins. I adapted this recipe from @thebigmansworld. These muffins turned out a-m-a-z-I-n-g if you follow me on instagram then you will have got to see me recipe testing them.
These may not contain gluten dairy or refined sugar but don’t worry they are still soft, moist and perfectly sweet thanks to the blueberries. You also can’t taste the protein powder and it doesn’t give them a gritty texture like some protein snacks have. I used fresh blueberries in mine but you can use frozen. I love how these muffins look they are by far the prettiest recipe I have ever made.
I also finally got another silicone muffin tray from amazon. As much as I love my heart shaped one it’s nice to have a normal round one and now i can change it up. This is also the first recipe I have made since I bought lots of new dish ware and food styling props. I am still experimenting with different back drops but it was loads of fun playing around with the set up. The hardest part was not eating a muffin until I was done. I made a smaller tester batch the first time and loved them so it was hard not to eat one straight away when I made the second larger batch to photograph.

Gluten dairy and refined sugar free blueberry protein muffins
A easy delicious one bowl gluten dairy and refined sugar free blueberry muffin recipe. These are soft moist and perfectly sweet thanks to the blueberries. You would never guess they were healthy and under 90 calories. Which means you enjoy these muffins everyday guilt free.
Ingredients
- 30 grams oat flour
- 30 grams coconut flour
- 30 grams unflavoured soya protein powder
- 15 grams coconut sugar
- 60 grams plain non dairy yogurt i used alpro
- 45 ml non dairy milk i used coconut milk
- 120 grams egg whites
- 1 1/2 tsp baking powder make sure its gluten free
- 1 tsp vanilla extract
- 50 grams fresh or frozen blueberries i used fresh
Instructions

Pre heat oven to 180c or 350f

Weigh out all your ingredients. Then add the dry ingredients to a medium size mixing bowl and stir to combine.

Next add all your wet ingredients to your dry ingredients and mix it well making sure there are no lumps of protein powder left. You will have a thick mixture that's ok.

You can add your blueberries into your mixture now or what i do is scoop the mixture into my silicone muffin tray first then individually add the blueberries to each muffin hole. This way i know each muffin will have the same amount of blueberries. i poke the blueberries in to the mixture and then cover them over with a little of the mixture.

Once you have added the blueberries whatever way it doesn't really matter. Bake at 180c or 350f for 20-25 minutes depending on your oven. Mine were perfect at the 23 minute mark.

Leave to cool in the tray for a few minutes then either eat them if you can't wait or leave to cool fully on a wire rack.

I store mine in a air tight container in the fridge for up to 5 days if you haven't eaten them all before then.
