Christmas is my favourite time of the year. 

The perfect time to whip out the old baking equipment and get creative in the kitchen.  Nothing gets me more excited for all the Christmas festivities than the smell of gingerbread.

My favourite recipe to make is the mince pies. I made at least 4 batches of them throughout December.  If you want to make them completely from scratch then a little forward planning is needed. As I made my own mincemeat, its great to be able customise it to suit your own taste.

If you want the flavour of a gingerbread man but not the hassle of making them. Then this recipe is perfect for you. As it has all the same great warming spices packed into a muffin form.

Gingerbread Muffin Ingredients 

Almond flour

Egg

Banana

Ground cloves

Cinnamon

Mixed spice

Nutmeg

Baking powder

Baking soda

Naturally Sweetened  

For this recipe I used a banana to sweeten the muffins instead of sugar. Not only does it give the muffins a nice sweetness but it keeps them soft and moist as well.  

Make Them Vegan 

Simply swap out the egg for a vegan replacement. A great option is a chia or flax egg as they are simple and easy to make.

Ingredients

  • 150 grams Almond flour
  • 220 grams Over ripe banana
  • 2 whole Eggs
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • !/2 tsp Ground cloves
  • 1 tsp Mixed spice
  • 1 tsp Baking soda
  • ! tsp Baking powder

Instructions

  1. Pre heat oven at 180c

  2. Mashed banana in a medium sized mixing bowl

  3. Add in two whole eggs, mix to combine

  4. Add in all the rest of the ingredients and mixed to combine until you have a smooth batter

  5. Divide mixture between 9 muffins holes ( i used a silicone muffin mould)

  6. Bake at 180c for 16-18 minutes or until tooth pick inserted into the middle comes of clean

  7. Leave to cool on in tray for 5 minutes. Then remove from tray to cool completely on a wire rack.

  8. I store them in an airtight container in the fridge because of the banana. It keeps them fresh for up to 7 days.
