Revamped classic gingerbread men with the same great flavour. Suitable for gluten, dairy and grain free diets. These cookies are great for decorating as they won’t spread when baked.  

Tis the season! 

Gingerbread men are a Christmas baking must. Here’s are a great recipe a soft baked cut out cookie that won’t spread when baked. Making these perfect for decorating.  

Whether you choose to keep it simple and dunk the bottom of the gingerbread men in melted chocolate. Or go all out and ice them to perfection it’s completely up to you. Regardless these cookies are delicious either way. 

It’s important to realise that not all sprinkles are gluten free though so always double check the ingredients list before using them.

Bonus recipe for sugar free icing sugar. 

Simply swap out the regular powdered sugar for Natvia’s granulated sweetener which I blitz into a powder in my Nutri bullet for 30 seconds. Then mix it with a little bit of water to create a thick paste for piping.  

Ingredients for the gingerbread men: 

  • Almond flour
  • Arrowroot powder
  • Dairy free butter
  • Granulated sweetener
  • Molasses
  • Cinnamon
  • Ground ginger
  • Nutmeg
  • Mixed spice

Gingerbread men are a great holiday activity for the whole family to enjoy. Unlike gingerbread houses which always look like a lot of fun but I have found them to be more annoying and harder to do with kids.

With this recipe you can involve the kids by letting them mix the ingredients together and then roll the dough out. Now you don’t need to stick with the conventional gingerbread man shape. There is plenty of different cookie cutters out there. Get creative with them and make an entire winter wonderland scene.  

Last year I created a recipe for gingerbread cut out cookies. Even though these were and are still great they use oat flour. Which has become something my stomach can’t tolerate anymore.  

As a result, I set to work creating a new recipe.  

Now this new recipe took four attempts to get right. Either the taste or texture didn’t work out the way I wanted It too. Finally, I managed to combine all the separate elements I like for all four recipes. To create what I find to be the perfect soft baked gingerbread cookie.

  • 30 grams molasses
  • 20 grams arrowroot powder
  • 170 grams alond flour
  • 50 grams dairy free butter i used pure
  • 30 grams granulated sweetener i used Natvia
  • 1 tsp cinnamon
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp mixed spice


  1. Pre heat oven to 180c (350f)

  2. In a medium sized bowl cream the butter, molasses and granulated sweetener together until light and fluffy.

  3. Add the almond flour, arrowroot powder, cinnamon, ground ginger, nutmeg, and mixed spice. until combined together.

  4. Place the batter on a sheet of grease proof paper and cover with a piece of cling film. Roll out the dough until flat about 1/4 to 1/2 cm thick. 

  5. Peel of cling film and use cookie cutters to cut out the shapes you want.

  6. If the dough is a little hard to work with then leave the cut out cookies on the sheet of grease proof paper and peel of the excess dough. 

  7. Lift the entire sheet of grease proof paper on to a baking tray and bake at 180c for 10 – 12 minutes until the edges have started to brown. 

  8. Remove from the oven and leave the cookies to cool for 5 minutes. Then transfer to a wire rack to cool completely. 

  9. Ice or dip the cookies in chocolate if you want. Store the cookies in airtight container for up to 5 days. Enjoy
