Easy Mincemeat Cookies (GF, DF, RFS)

Easy mincemeat cookies the taste of a mince pie but in cookie form. Much easier and quicker but just as tasty and festive. Enjoy these gluten, dairy and refined sugar cookies this Christmas guilt free.

CHRISTMAS is one of the best times to get your bake on! These mincemeat cookies are delicious and taste like a mince pie without the hassle of making the pastry.

Now there is a time and a place for a mince pie and I have a great recipe for them here but if you don’t have the time to make, chill, and bake the pastry. Then these mincemeat cookies are a great alternative.

For these cookies I made a batch of homemade mincemeat I already have a recipe for that on the blog you could of course use a store brought kind instead. There is a few gluten and dairy free options out there. I made my own as I can’t eat raisins, it’s a fun and great way to kick off the start off the festive baking season.

Ingredients you need:

  • Almond flour
  • GF plain flour
  • DF butter
  • Coconut sugar
  • Natvia sweetener
  •  large egg
  • Mincemeat
  • Ground cloves
  • Ground nutmeg
  • Ground cinnamon 
  • Baking soda
  • Rum extract (optional)
  • Mixed peel (optional)

One bowl recipes are the best and this one is no different. All you need is a spoon, medium sized bowl, grease proof paper and a baking tray. Total time for these is 30 minutes from start to finish.

Final result, taste like a mince pie and a soft baked cookie had a baby haha! Make these for your next cookie swap or as gifts for friends and family. I made them for work colleagues, they were a big hit.

Ingredients

  • 100 grams GF plain flour
  • 75 grams GF, DF mincemeat
  • 50 grams Almond flour
  • 50 grams DF butter
  • 1/2 large egg
  • 30 grams Granulated sweetener i used Natvia brand
  • 10 grams Coconut sugar
  • 10 grams Mixed peel optional
  • 1 tsp Ground cloves
  • 1 tsp Ground nutmeg
  • 1 tsp Rum extract optional
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Baking powder

Instructions

  1. Pre heat oven to 180c or 350f 

  2. In a medium sized mixing bowl. Cream the butter, coconut sugar and sweetener together until pale and creamy.

  3. Add half a large egg and mix to combine. 

  4. Next add plain flour and almond flour mix well to combine

  5. Add mincemeat, ground cloves, nutmeg and cinnamon.  Mix to combine.

  6. Optionally stir in the rum extract and mixed peel.

  7. Lastly add in the baking powder and mix to combine.

  8. Scoop dough on to a grease proof lined baking tray. i used one heaping tablespoon for each cookie. Flatten then out. 

  9. Bake cookies at 180c for 9-11 minutes. Depending on how soft you like them. I baked mine for 9 minutes. 

  10. Store cookies in an airtight container at room temperature for 5-7 days. Enjoy
