Cookie Dough Pretzel Bites (Gluten Free, Vegan)

Cookie dough pretzel bites offers that salty sweet combination that is irresistible. These perfectly portioned bites would make the idea snack for your next movie night. They take less than 15 minutes to make and are gluten free and vegan.  

These cookie dough pretzel bites were created on a whim. I was shooting another cookie dough recipe when I seen on Pinterest the idea for adding pretzels into your cookie dough. Since I had already finished the cookie dough, I decided to sandwich a ball in between two pretzels instead. Am aware this isn’t an original idea but a tasty one nonetheless. 

In addition to the chocolate chips already in the cookie dough. Dunking half the cookie dough pretzel bites into melted dark chocolate elevates these to the next level. If you love the salty sweet combo, you can even sprinkle a little extra flaky sea salt on top of the melted chocolate.

I find using dark chocolate helps to balance out the sweetness of the cookie dough but you can use whatever percentage of chocolate you prefer.

How Easy are These Cookie Dough Pretzel Bites to Make? 

That’s a simple question to answer, as am sure you probably already have all the ingredients you need to make them in your cupboards. Since they only use 5 simple ingredients and take less than 15 minutes to make. All you need is one bowl and a spatula or spoon to mix all the ingredients together.  

Do You Have to Heat Treat Your Flour? 

The short answer is it’s up to you. If your worried about eating raw flour or you plan to give these to other people, then it’s probably best to heat treat your flour first just to be safe.  Don’t worry though it’s simple to do. Spread the flour on to a baking tray and pop it in a pre-heated oven at 180c for 5 minutes. This will kill off any lingering bacteria that might be in your flour. Remove the tray and leave to cool, then use as normal.

Where to Find Gluten Free Pretzels? 

The only gluten free and vegan pretzels i have found are from the brand Schar. I buy them from Asda for £1. They are mini pretzels which works great for these cookie dough pretzel bites.

Gluten free plain flour

Dairy free butter

Coconut sugar

Vegan chocolate

Schar pretzels

Final Result  

A super fun and easy snack to make that only requires one bowl. Kid friendly and makes the perfect movie snack. Just try not to devour them in one go.

Ingredients

  • 150 grams Gluten free plain flour without xantham gum
  • 80 grams Dairy free butter i used Pure brand
  • 30 grams Coconut sugar
  • 30 grams Vegan chocolate
  • 60 grams Gluten free pretzels i used Schar brand

Instructions

  1. Optional place flour on a baking tray and heat in the oven at 180c for 5 minutes to kill any bacteria.

  2. In a large mixing bowl cream the butter and coconut sugar together.

  3. Add flour and mix together until a dough forms.

  4. Roughly chop chocolate and stir through the dough.

  5. Scoop the dough into 1 tsp balls

  6. Place one cookie dough ball inbetween 2 pretzels and press down lightly.

  7. Optional melt down some more chocolate and dunk half the side of the cookie dough pretzel bite into the melted chocolate then leave to set.
