Crunchy oats, quinoa flakes and toasted hazelnuts are coated in a homemade Nutella with raw cacao powder and hemp seeds mixed in for extra crunch. Sweetened with fruit syrup and VitaFiber to make this a high fibre, gluten free, vegan and oil free granola with clusters. Perfect for breakfast or toppings for smoothie bowls and yoghurt.

This chocolate hazelnut granola is seriously addictive and not as unhealthy as it first sounds. Making your own chocolate hazelnut spread aka Nutella makes this granola a lot better for you then store-bought Nutella is. You can get the recipe for the 4-ingredient homemade Nutella here.

Granola with clusters is the best kind of granola and you don’t need oil or lots of liquid sweetener to create those big crunchy mounds of greatness.

By using VitaFiber which is a high fibre white powder that you add water to, to create a very sticky clear syrup. It is used as a low-calorie sugar substitute in baking as it’s 60% as sweet as sugar. When you combine that with the fruit syrup and homemade Nutella it encases the oats, hemp seeds and toasted hazelnuts beautifully.

The trick to getting those big clusters is to spread the granola out on baking tray and pack it down. Then when it comes out of the oven allow it to cool completely before you break it up into whatever size clusters you desire.

This recipe took me 3 attempts to get the “Nutella” flavour just right. Which means I have been eating a lot of granola for the last few days, not that am complaining about that. Writing this post has made me want to make another batch as I devoured this all in one day.

Ingredients

  • 50 grams GF rolled oats
  • 50 grams quinoa flakes
  • 20 grams raw cacao powder
  • 30 grams roasted hazelnuts
  • 20 grams hemp seeds
  • 50 grams homemade nutella
  • 20 grams fruit syrup i used sweet freedom
  • 40 grams vitafiber i used bulk powders
  • 45 ml water

Instructions

  1. Pre heat oven to 180c and line a baking tray with grease proof paper.

  2. Mix all dry ingredients except the vitafiber and hazelnuts in a medium sized mixing bowl and stir to combine.

  3. Measure out the homemade nutella and mix with a tablespoon of water to thin it out. 

  4. Add vitafiber to a small pan with 45 ml of water and bring to a boil. Once powder has turned clear turn of heat and pour into the dry ingredients. Working quickly to mix everything together. 

  5. Add the thinned out nutella to the mixing bowl along with the fruit syrup and stir to combine. Making sure everything is evenly coated. 

  6. Roughly chop the hazelnuts then mix them and the hemp seeds into the granola. 

  7. Pour the granola on to the lined baking tray. Spread it out and press it down to form one layer.

  8. Bake in the oven for 18-20 minutes. Remove from oven and leave to cool completely on the baking tray before breaking it up into clusters. 

  9. Store in an air tight container in an cool dry place.
