Chocolate Chip Banana Bread Muffins (GF, DF, RSF)

These chocolate chip banana bread muffins are moist, fluffy and perfectly sweet. Packed with ooey- gooey chocolate chips they make a great healthier treat or on the go snack. Gluten, dairy and refined sugar free.  

Banana bread has got to be one of my all-time favourites. I make these chocolate chip banana bread muffins every week. Seriously they are part of my weekly meal prep, that’s how great these muffins are! As a result, this is the most tried and tested recipe on the blog. They are a no fail recipe if ever there was one.  

To make these muffins into a traditional loaf simply double the recipe below and bake for 35 minutes or until a tooth pick inserted into the middle come out clean.

Personally, I always make the muffin version because of how easy and convenient they are. Also, I have no portion control and will eat like half the loaf otherwise.   

What type of bananas make the best banana bread?

To make the best banana bread you need to use overripe bananas. The more brown and spotting the banana peel the more ripe the banana inside will be.

Top Tip

Don’t worry if your bananas aren’t ripe though. A simple hack for you is to pop the banana into the oven at 150c for 5 ish minutes to help speed up the ripening process. Just be careful when removing the banana as it will be hot. Leave it to cool before peeling and mashing the banana. It should be very soft and therefore easier to mash.

What Type of Chocolate to Use

Chips or chunks that is the question? Chips hold there shape better when baked. Chunks or a chopped bar of chocolate melts more and will be suspended in the batter better.

Store Brought or Homemade

Store bought is easier and more convenient and the most common one i use. Homemade is more fun and better for dietary requirements. I’ve recently started making my own chocolate. Which is really fun and not as difficult as it seems. I love how customisable it is. As i have found it hard to find any Paleo or raw chocolate.

Ingredients

  • 75 grams Almond flour
  • 110 grams Banana overripe are the sweetest
  • 1 large Egg
  • 1 tsp Baking powder
  • 25 grams Dark chocolate chips 70% leave out for plain banana bread

Instructions

  1. Pre heat oven to 180c

  2. Mash banana in a medium sized bowl.

  3. Add almond flour and egg into the mashed banana and mix to combine them together.

  4. Add baking powder to the mixture and stir to combine.

  5. Sprinkle half the chocolate chips into the mixture and stir to combine

  6. Divide mixture between 5 muffins holes. Top each muffins with the remaining chocolate chips

  7. Bake muffins at 180c for 16-18 minutes.

  8. Remove muffins from the oven and using a tooth pick or skewer insert into the middle of one of the muffins. If it comes out clean then they are done.

  9. Remove muffins from the muffin tray and leave to cool completely on a wire rack. Once cooled store in an airtight container at room temperature for 2-3 days or in the fridge for 5-7 days.
