Easy and addictively delicious 5 ingredient chocolate caramel cookies. Not the healthiest but definitely worth it. These soft and chewy cookies will cure any sweet tooth/cookie cravings in one bite. Gluten free and vegan.

The Most Delicious Chocolate Caramel Cookies

If chocolate, caramel and cookie dough isn’t the most perfect combination then I don’t know what is. These chocolate caramel cookies combine all three and it’s a match made in heaven. They’re thick dough and chewy with a delicious slightly crisp outer edge. Plus, you get chunks of melted chocolate and gooey caramel in every bite. What’s not to love!

Where to Find Vegan Caramel Sauce

Of course, the easy answer is amazon as they seem to sell just about everything. The only problem with that is the ingredients used to make said vegan caramel sauce aren’t always the best. Most vegan caramel sauces range from £2 a jar all the way up to £8 a jar.

The solution is to make your own. Now I know that sounds hard but it’s actually very simple and requires only 3 ingredients. A can of coconut milk or creamed coconut, coconut sugar and corn starch or arrowroot powder.

For the coconut milk or you want is the solid coconut that separates from the liquid and sits at the top of the can. Add the coconut milk to a small saucepot along with the coconut sugar and corn starch or arrowroot powder. Stir everything together and bring the mixture to a boil, then leave it to simmer and thickened. If it’s not thick enough for you then add a teaspoon of corn starch at a time until desired thickness is achieved. Remember once its cooled it will thicken up more. Store any leftover caramel sauce in an airtight container in the fridge for up 2 weeks.

Do you need to chill the dough?

No, this really is a quick and simple cookie recipe. I personally hate having the wait for things to chill before u can bake them. That’s way I always try to make recipes that don’t require any chilling time. Although it is sometimes necessary in certain recipes.

How to Store the Chocolate Caramel Cookies

This recipe makes 6 cookies. Of course, you can easily double or triple the recipe to make the amount you require. I store any leftover cookies in an airtight container at room temperature for up to 5 days. although they don’t last long as they are super addictive.

  • 150 grams Gluten free plain plain without xanthan gum
  • 80 grams Dairy free butter
  • 30 grams Coconut sugar
  • 30 grams Vegan chocolate Or use chocolate filled with caramel
  • 20 grams Vegan caramel sauce


  1. Pre heat oven to 180c

  2. In a large mixing bowl stir together the flour and coconut sugar. Then mix in the butter.

  3. Mix in half the chocolate. Then scoop the cookie dough onto a lined baking tray. It should make 6 cookies.

  4. Add the other half of the chocolate between the six cookies.

  5. Press the cookies down to flatten them as they won't spread in the oven.

  6. Bake at 180c for 8-10 minutes. Remove the cookies when they are starting to turn s light golden brown. Leave to cool of baking tray for 5 minutes to firm up.

  7. Store cookies in an airtight container once fully cooled. Best eaten within 3 days.
