Chewy & Fudgy Almond Butter Blondies (GF, VG, Refined Sugar Free)
Super yummy almond butter blondie bars these are very addicting. They’re perfectly thick and fudgy with gooey chocolate chips and topped with flaked almonds. Try not to devoured them all in one go! These are gluten free, vegan and refined sugar free.
When it comes to brownies/blondies there are two types of people. One’s that like them chewy and fudgy and one’s that like them cakey.
Now everyone is entitled to their own opinion but chewy and fudgy are the best kind and what you find me baking every time.
I must admit am not the best at making brownies I tend to over bake them and make them dry. Thankfully that all ended when I created this recipe. These turned out amazingly fudgy with ooey gooey chocolate chips.
What makes this recipe even better is how simple and quick it is to make. All you need is 8 ingredients 1 medium sized mixing bowl, 1 small bowl, 1 fork and a brownie pan or a small deep pan.
I used a brownie pan to save me from cutting them later. This also allow each piece to have more edges, so if you corner edge fan then definitely use a brownie pan. If you prefer the centre brownie then use a small deep pan like a loaf pan to bake your blondies. Then simply cut into bars once they are baked.
These are gluten free, vegan and refined sugar free. Not that you would know it. I used oat flour, a chia egg and coconut sugar for this.
To keep these vegan, make sure your chocolate doesn’t contain any milk. You don’t need to buy dairy free chocolate though, just use dark chocolate as it tends not to have any milk added. I used 70% cacao which I think works perfectly with the sweetness of the coconut sugar.
Using a chocolate bar chopped up into pieces allows for the ooegy gooey pools of chocolate instead of chocolate chips as they are made to hold their shape better when baked.
I made 7 almond butter blondies from the recipe and let me tell you they didn’t last a minute in my house. I could have eaten the entire tray in one go! If I hadn’t had to photograph them then I would off.

- 100 grams GF oat flour
- 160 grams plain soy yogurt i used alpro
- 30 grams almond butter i used homemade
- 30 grams coconut sugar
- 25 grams dark chocolate i used 70%
- 5 grams flaked almonds
- 20 grams chia seeds
- 5 tbsp water
- 1/2 tsp baking powder
Pre heat oven to 180c (350f)
Mix chia seeds and water together in a small bowl and leave to set for 5 minutes.
To a medium sized mixing bowl add oat flour, baking soda and coconut sugar. mix to combine.
Next add soy yogurt, almond butter and chia egg. Mix well to combine all ingredients together.
Roughly chop up your chocolate and stir into blondie mixture.
Spoon mixture into either a grease proof lined brownie tray or small deep pan. I used a brownie tray and spooned 3 tbsp into 7 of the cavities.
Bake in the oven at 180c for 14 minutes for fudgy blondies or longer for cakey blondies.
Remove from oven and leave to cool for a few minutes in the tray then transfer to a wire rack to cool completely.
Store in a airtight container in a cool dry place for 3 days. If you don't devoured them all before then.
