Tips For Making These Cherry Bakewell Breakfast Bars. 

Buckwheat Flakes: High in protein and fibre making them a great alternative to rolled oats as they have the same texture.  

Buckwheat Flour: Similar to the buckwheat flakes they help blind everything together, just like oat flour would do.  

Vegan Protein Powder: Use either an unflavoured vegan protein powder or vanilla flavoured. Make sure you like the taste and texture of your chosen protein powder as it will affect the finished bars.  

Mashed banana: Use to blind all the dry ingredients together without the need for eggs or oil. As well as adding the natural sweetness needed for these bars. Use overripe bananas to make them easier to mash and add the most sweetness.

Dried Cherries: Gives an added chewiness and extra sweetness as well as the cherry flavour. 

Baking Powder: Helps the bars to raise and puff up adding to the texture of the final bar.

Ingredients Needed for These Breakfast Bars: 

Buckwheat Flakes 

Buckwheat Flour  

Banana  

Vegan Protein Powder 

Dried Cherries

Ingredients

  • 120 grams Buckwheat flakes
  • 70 grams Buckwheat flour
  • 35 grams Vegan unflavoured protein powder or vanilla
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 175 grams Mashed banana
  • 12 drops Cherry flavour drops i used ones from my protein
  • 6 drops Marzipan flavour drops i used ones from my protein
  • 20 grams Dried Cherries

Instructions

  1. Preheat oven to 180c and line a rectangle deep baking dish with greaseproof paper.

  2. In a large mixing bowl add all the dry ingredients together and mix to combine. Making sure there isn't any lump of protein powder left.

  3. In a small bowl mash the overripe banana.

  4. Add the mashed banana and both the flavour drops to the dry mixture and mix well to combine until it begins to clump together.

  5. Mix through the dried cherries.

  6. Add the mixture to the lined baking dish and press down to create and even layer.

  7. Bake at 180c for 16-18 minutes until the edges begin to turn golden brown.

  8. Remove from oven and leave to cool in the baking dish or 5-10 minutes to firm up. Before removing from the dish and leaving to cool completely on a wire rack.

  9. Once cooled cut into 10 bars and store in an airtight container for 5-7 days. Heat in the microwave for 15 to 25 seconds to warm up for that fresh baked taste.
