A delicious pasta covered in cashew cream cheese with tomatoes and basil. Ready in under 20 minutes. Making it a weekly staple in are household. Perfect for meal prep too. Gluten free, oil free and vegan.  

This Cheesy tomato and basil pasta is made cheesy thanks to the wonders of nutritional yeast. It has some seriously magical transforming powers. With a little vegan magic, this stuff can go from dry yellow flakes to a rich creamy and cheesy sauce in no time.  

One pot or pan meals are great time savers. Not only are they normally super easy and quick but don’t create a lot of mess in your kitchen. Which saves the inevitable clean-up, i.e. the one down side to making your own food.

The cashew cream cheese is so versatile, frankly I love to just spread it on crackers or dip some breadsticks straight in. Hands down one of my most favourite savoury recipes I’ve made to date. 

Gluten free pasta and products in general have come a long way in the last year. No longer do you have to feel like you’re missing out or restricted with what you can eat anymore.  I would say pasta and bread products in particular have come on leaps and bounds from the crumbly and holey products they used to be. 

I like to think of myself as a bit of a pasta connoisseur.

At one time I had an entire cupboard dedicated to gluten free and vegan pastas. I’ve since eaten my way through the vast array of pasta. Having narrowed down my collection to a selected few.  

In first place: Tesco’s free from tagliatelle. Tagliatelle was always my favourite pasta before becoming gluten free. This is a great alternative that taste the same. They are £1.15 for 250g and cooks in 12 minutes. 

Second place: Mama instant rice noodles. The quickest and easiest to make and my go to gluten free pasta. They are 150g for 225g and cook in as little as 1 minute if stir fried or 3 minutes when place in a bowl and cover with boiling water.

Third place: Sainsbury’s buckwheat penne. Is great for an extra protein boost as they contain 12.7g of protein per serving. Taste great are £2.25 for 500g and cook in 10 minutes. 

Special mention: Asda free from pasta shapes for kids. These come in cute animal shapes and taste great. They are 75p for 250g and cook in 9 minutes.  

Pastas made from red lentils, green pea or chickpeas. Are a great way to add extra protein to your meal, especially if your vegan.

Ingredients

  • 150 grams GF penne pasta Dry pasta weight
  • 50 grams Cashew cream cheese Recipe linked above
  • 4 medium Fresh salad tomatoes
  • 10 Fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil and cook 150g of dry pasta according to package instructions.

  2. While pasta is cooking chop up tomatoes and make the cashew cream cheese if you haven’t already. Or use store bought to save time. 

  3. Once pasta is cooked drain off the water. Add in 50 grams of cashew cream cheese mix everthing together until well incorapted. Add extra cashew cream scheese if you want.

  4. Add in chopped tomatoes, basil and salt and pepper. Either serve immediately or leave to cool before storing in an airtight container in the fridge.
