It’s made with a combination of buckwheat flakes, almonds, mashed banana, coconut oil, fruit syrup, cinnamon and nutmeg. Making this a gluten and oat free vegan granola.

Spread your granola into a even layer on your baking tray. Then press it down with either a spatula or the back of the spoon.
Do not touch the granola when it comes out the oven. Leave it to cool completely on the baking tray.

Banana Bread Granola
Banana bread granola that is easy to bake, healthy and taste just like a loaf of banana bread. Using minimal ingredients and only takes 20 minutes to make.
Ingredients
- 120 grams Banana
- 160 grams Buckwheat flakes
- 20 grams Almonds Flaked or chopped
- 15 grams Coconut oil Melted
- 20 grams Liquid sweetener I used Sweet freedoms fruit syrup
- 2 tsp Cinnamon
- 1/2 tsp Ground nutmeg
Instructions

Pre heat oven to 180c.

Mash banana in a small bowl.

Melt coconut oil and pour it into the dry ingredients along with the mashed banana and liquid sweetener. Mix well to combine and make sure everything is coated.

Spread mixture onto a baking tray and press it down with either a spatula or the back of a spoon. To create a flat single layer. Bake at 180c for 10 minutes.

Remove granola from the oven and crumble it up into chunks. Return the granola to the oven to bake for another 8-10 minutes. Be careful not to burn it as it can catch quickly. Check on the granola every few minutes until golden brown.

Remove from oven and leave to cool on baking tray.

Once cooled store in an airtight container.
