Banana bread granola that is easy to bake, healthy and taste just like a loaf of banana bread. Using minimal ingredients and only takes 20 minutes to make.

A Healthy Breakfast Recipe  

If you love banana bread like me, then you’ll love this recipe for banana bread granola.  

It’s made with a combination of buckwheat flakes, almonds, mashed banana, coconut oil, fruit syrup, cinnamon and nutmeg. Making this a gluten and oat free vegan granola.

This banana bread granola is simple and easy to make with minimal ingredients. It’s also much healthier than any store bought granola. 

 

Eat banana bread for breakfast with this granola. As it taste very similar.  

Another great way to use up overripe bananas.  Other than nice cream and a loaf of banana bread obviously.

Easiest Way To Create Granola Clusters.

Who doesn’t!  Here’s how to create them. 

Spread your granola into a even layer on your baking tray. Then press it down with either a spatula or the back of the spoon.  

Do not touch the granola when it comes out the oven. Leave it to cool completely on the baking tray.

Make It Your Own  

The best thing about making your own granola, customising it with whatever you like. Here’s some options:

Rolled gluten free oats instead of buckwheat flakes  

Pecans instead of almonds  

Add chocolate chips for a little extra treat  

Add some dried fruit like cranberries or raisins 

Use up anything you have in your pantry and get creative with your add ins.

Banana Bread Granola

Ingredients

  • 120 grams Banana
  • 160 grams Buckwheat flakes
  • 20 grams Almonds Flaked or chopped
  • 15 grams Coconut oil Melted
  • 20 grams Liquid sweetener I used Sweet freedoms fruit syrup
  • 2 tsp Cinnamon
  • 1/2 tsp Ground nutmeg

Instructions

  1. Pre heat oven to 180c.

  2. Mash banana in a small bowl.

  3. Melt coconut oil and pour it into the dry ingredients along with the mashed banana and liquid sweetener. Mix well to combine and make sure everything is coated.

  4. Spread mixture onto a baking tray and press it down with either a spatula or the back of a spoon. To create a flat single layer. Bake at 180c for 10 minutes.

  5. Remove granola from the oven and crumble it up into chunks. Return the granola to the oven to bake for another 8-10 minutes. Be careful not to burn it as it can catch quickly. Check on the granola every few minutes until golden brown.

  6. Remove from oven and leave to cool on baking tray.

  7. Once cooled store in an airtight container.
