Balsamic beetroot quinoa burgers (GF, VG, OF)

Packed full of flavour while being firm on the outside and soft in the middle. These balsamic beetroot quinoa burgers are easy to make with only five ingredients and baked in the oven for a healthier vegan take on a burger. These are gluten free, oil free, vegan and do not use any lentils or beans like most meat free burger recipes.

Vegan burgers are very popular right now but most of them contain beans or lentils. Am sure they taste great but as I can’t tolerate either of them this is the second vegan burger I have created. This first being this sweet potato tofu quinoa burger. You can find that recipe here.

For this recipe I wanted to use beetroot as the main ingredient. Mainly because I bought a massive bag of cooked beetroot from Costco. I also made fudgy dark chocolate beetroot brownies for a sweet recipe using the beetroot. You can get the recipe for that here if you want dessert after your make these burgers.

Making these burgers took 3 attempts to create the right texture. The main problem I had was with how wet the mixture was. This lead to experimenting with quinoa flour instead of cooked quinoa. As the flour soaked up a lot more of the liquid from the beetroot tham the cooked quinoa did. Using 2 pieces of gluten free bread that I turned into breadcrumbs along with the quinoa flour worked great at binding everything together.

Balsamic vinegar pairs beautifully with beetroot and the fresh basil turns these burgers into a tasty fresh Italian inspired burger.

Baking them in the oven keeps this recipe oil free and makes them a lot easier to handle, as the mixture will be quite wet. It will firm up in the oven and allow you to flip them part way through baking. If you want a crispier outside then you can finish the off in a non-stick frying for a few minutes each side. The texture of these burgers turned out great as they hold together great and wont crumble when bitten into.

Serving suggestions use one or two burgers either in a GF bun with sliced tomatoes and lettuce, in-between two pieces of GF bread or wrapped in lettuce for a lower carb version. Either way these balsamic quinoa burgers make a great meat free alternative to a classic burger.

Ingredients

  • 150 grams cooked beetroot
  • 60 grams quinoa flour
  • 2 pieces gluten free bread
  • 3 tbsp balsamic vingear
  • 5 grams basil
  • salt and pepper to taste

Instructions

  1. Pre heat oven to 180c and line a baking tray with grease proof paper

  2. Add beetroot to a food processor or high speed blender and blitz until a chunky paste is formed. 

  3. Add in your quinoa flour and balsamic vinegar and blitz again. 

  4. Add basil and salt and pepper and pulse to combine.

  5. Your mixture should be thick and wet. It will firm up once baked.

  6. Scoop mixture out and place on the baking tray. I used a 1/4 measuring cup to make 5 burgers.

  7. Bake in the oven for 25 minutes at 180c

  8. Remove from oven and flip the burgers over. Bake for a further 10 minutes.

  9. Remove from oven. Either serve immediately or  transfer to a wire rack to cool, Store in an airtight container in the fridge for 3 to 5 days .
