Apple Spice Chocolate Chip Breakfast Bars (Gluten Free, Dairy Free, Vegan Option)

Dig out your chunky knit scarves and fussy warm socks. Pop on the kettle and make yourself a cup of tea and tuck into one of these apple spice chocolate chip breakfast bars. Great for a quick breakfast bite or as a treat with your favourite hot beverage.

It’s finally starting to turn cold here in Scotland. The leaves have turned a gorgeous yellow and amber colour. They have started to drop off the trees and cover the streets. Autumn is finally here.

How To Make Them Vegan


Simply swap out the egg for 2 tbsp of aquafaba. I switch between using an egg and using aquafaba depending what I have to hand. The bars turn out great either way.

How To Make Them Oat Free

For this recipe I used buckwheat flakes instead of rolled oats. Since I can’t eat oats gluten free or otherwise. Buckwheat flakes make an excellent replacement.

Final Result

A great tasty breakfast option or snack. Easy to make and packed full of all the best autumnal spices

Ingredients

  • 125 grams Apple sauce i used homemade. you can use store bought
  • 100 grams Buckwheat flakes
  • 75 grams Buckwheat flour
  • 25 grams Powered peanut butter i used pbfit brand
  • 25 grams Crunchy peanut butter
  • 1 medium Egg or 2 tbsp aquafaba
  • 65 grams Non dairy milk i used Alpro coconut milk
  • 15 grams Liquid sweetener i used Sweet Freedom fruit syrup
  • 1/2 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Ginger
  • 1 tsp Mixed spice
  • 1/2 tsp Ground cloves
  • 2 tsp Cinnamon
  • 40 grams Dairy free chocolate Chips

Instructions

  1. Pre heat oven to 180c and line a rectangular baking dish with greaseproof paper.

  2. Mix the dry ingredients together in a medium sized bowl.

  3. Mix the wet ingredients together in a small bowl.

  4. Add the wet ingredients to the dry ingredients and stir until well combined.

  5. Stir the chocolate chips through the batter.

  6. Add the batter to the lined baking dish and bake in the oven at 180c for 20 minutes.

  7. Remove from oven and leave to cool for 5 minutes before removing from baking dish on to a wire cooling rack to cool completely

  8. Cut into 8 squares and store in an airtight container in the fridge for 3-5 days.
