Apple Pie Muffins (Paleo, RFS, OF)

These apple pie muffins have all the flavours of a traditional apple pie but with the portability of a muffin. Soft, fluffy and delicious. An easy one bowl recipe perfect for Sunday baking. These make a great snack or after dinner treat! They are gluten free, dairy free, oil free, paleo and refined sugar free.

Me! I love all things cinnamon and gingerbread spiced.

Recently I have been making my own applesauce. It’s super easy all you need is one cooking apple I used a large bramley apple.

Peel the apple if you want, I don’t bother as am too lazy for that. Roughly chop it up and add to a medium sized sauce pot along with ½ cup of water. Bring to a boil then reduce to a simmer. Cook until soft then mash with a fork. Optionally you can add 1 tsp of cinnamon. Store it in an airtight container in the fridge for 7-10 days.

Since making the almond pecan banana bread muffins last week. I had the idea to replace the banana with the applesauce I make every week.

Two attempts later and I have created the perfect apple pie muffins. Soft and fluffy with a nice hint nutmeg and cinnamon.

I chose to use my own applesauce for this recipe but you can use store-bought if you don’t have the time to make your own. Try and find one that is unsweetened.

Like with most things I bake I like to use a silicone muffin mould. As this way it makes it easy to pop your muffins once baked. Nothing worse than spending the time and effort on creating yummy treats, for them to then get stuck in the pan

Next up to bake will be gingerbread muffins. I have definitely got the autumn bug now. What’s your favourite seasonal food.

These  make a great snack or after dinner dessert. I have been taking one to work with me everyday for a mid day treat. They are a nice little pick me up to get me through the rest of my shift.

Ingredients

  • 150 grams unsweetened apple sauce i made my own
  • 25 grams coconut flour
  • 25 grams almond flour
  • 2 large eggs
  • 10 grams fruit syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla bean paste
  • Pinch of salt

Instructions

  1. Pre-heat oven to 180c (350f) 

  2. In a medium sized mixing bowl. Add coconut and almond flour along with the baking soda and powder. Mix to combine. 

  3. Next add the applesauce and 2 large eggs. Whisk to combine everything together. 

  4. Then add fruit syrup and vanilla bean paste.Mix that into the mixture. Then stir in the cinnamon, nutmeg and salt.

  5. Scoop mixture into a silicone muffin tray. I used a 1/4 measuring cup for this. Fill each muffin hole to the top as they wont rise much. I made 5 medium sized muffins in total.

  6. Bake in the oven for 20-24 minutes until browned on top and a tooth pick inserted into the middle of the muffin comes out clean.

  7. Leave to cool in the muffin tray for 5 minutes. Then remove to cool completely on a wire rack.

  8. Store in an air tight container in the fridge for 5-7 days. Enjoy.
