These paleo almond pecan banana bread muffins are deliciously addictive. Super simple and all made in one bowl. You need to make these asap! They are gluten free, dairy free, oil free and refined sugar free not that you would ever know it.

What is it about muffins that is more appealing than a loaf?

Maybe it’s the fact they are individual pre-portioned and ready to grab and eat. Call me lazy but if I can get away with making as little dirty dishes as possible than am all for it. Especially since I don’t have a dishwasher! I dream of a big kitchen with lots of counter space, centre island and large pantry. For now, my kitchen will suffice.

In spite of my small kitchen I still managedto create these paleo almond pecan banana bread muffins. Which let me tell you turned out so so so delicious. Seriously go find some brown spotty bananas and make these asap!

Make your life that bit easier and use a silicone muffin mould so these little beauties will pop right out once baked.

Almond Pecan Banana Bread Muffins (OF, RFS, Paleo)

These Paleo almond pecan banana bread muffins are deliciously addictive. Super simple and all made in one bowl. You need to make these asap! They are gluten free, dairy free, oil free and refined sugar free not that you would ever know it.

Ingredients

  • 150 grams over ripe banana
  • 25 grams Almond flour
  • 25 grams coconut flour
  • 25 grams chopped pecans
  • 25 grams flaked almonds
  • 20 grams fruit syrup
  • 2 large eggs
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Pre heat oven to 180c 

  2. In a medium sized mixing bowl mashed banana until smooth. whisk in eggs and add fruit syrup then mix together. 

  3. Add in both flours and stir well to combined making sure there are no clumps of flour left. 

  4. Add in baking soda, baking powder and salt. Stir to combine 

  5. Mix in the almonds and pecans. 

  6. Divide batter between a 6 hole silicone muffin tray . Fill each hole to the top as they don't rise much.

  7. Bake muffins for 18-20 minutes at 180c 

  8. Remove from oven and leave to cool in the tray for 5 minutes before removing to cool completely on a wire rack.

  9. Store muffins in an airtight container in the fridge for up to 5 days. Enjoy
